Prep 1. Wash and chop onion and pepper. 2. Pit and chop avocado. Cook 1. Crack eggs into skillet over medium-low heat; add salt and pepper to taste, then scramble and cookuntil done. 2. Lay out tortillas and put lines of peppers, onions, avocado, and mozzarella in the middle. Make sure to leave enough room to fold up all sides. This is why I like to use big tortillas. 3. When eggs are done, add them to the wraps. Season with more salt and pepper, if desired. 4. Fold up the wraps. I do the sides first, then roll up the front and tuck it under the filling, then roll the whole thing away to finish. If you're not sure how, just watch a YouTube video on rolling burritos. 5. Add butter to the skillet, increase heat to medium or medium-high. 6. Fry the wraps on both sidesuntil crispy. 7. Enjoy.
