1. Core apples and cut into 1 1/2-inch chunks, leaving the peels on. 2. Put apples into slow cooker. 3. Use a vegetable peeler to peel off a few small strips of lemon peel (or just use a zester to get some zest). 4. Add lemon peel, honey, cinnamon sticks, nutmeg, cloves, and ginger to slow cooker. 5. Cover and cook on low for 6 hours (or high for 3 hours), stirring occasionally. 6. Remove cinnamon sticks. 7. Use an immersion blender to blend until smooth. 8. Taste and add additional honey if desired. Note: Keeps for 10 days in the refrigerator or a month if frozen.
