Prep: 1. Cut off the ends of the zucchini, then dice into half-inch cubes. Cook: 1. Put the olive oil in a medium pot or saucepan over medium-high heat until it's hot. 2. Add the diced zucchini, season with salt and pepper, and cook for 2 minutes, stirring occasionally. You want the zucchini to just start softening. 3. Stir in the rice, water, raising, and a big pinch of salt. 4. Turn the heat to high and wait for it to boil, stirring occasionally. 5. Once it boils, cover and reduce the heat to low. Cook without stirring for about 16 minutes (until the water is absorbed and the rice is tender). 6. Fluff with a fork, season with more salt and pepper if desired.
